Clinton Bertrand, Executive Chef

With an impressive cooking resume that stretches from Central Texas to Northern California, Executive Chef Clinton Bertrand brings his passion and expertise to Bistrot Mirabelle, serving southern French fare. After watching all the men in his family cook, this Texas native with strong Cajun roots knew that a career in the kitchen is where he belonged.
Early in his career, Clinton worked in Austin as sous chef at Vespaio under the leadership of owner Alan Lazarus when Lazarus served as executive chef. In 2003, Clinton ventured off and made his mark in San Francisco where he spent time at three of the city’s popular restaurants including the French bistro, Jeanty at Jacks. At Bistrot Mirabelle, Clinton creates southern French-inspired dishes, inspired by the techniques and flavors of a Provencal grandmother.
Brian O’Neill, Owner
A veteran restaurant owner and operator, Brian O’Neill brings a broad background ranging from fine dining to high volume to his latest venture, Bistrot Mirabelle, a French bistro serving Southern French fare in Austin. With Bistrot Mirabelle, O’Neill has found a home for one of his favorite concepts – a classic neighborhood restaurant serving French comfort food in a relaxed atmosphere.
The restaurant bug bit O’Neill at an early age taking him on a grand adventure that would include management positions at Boston’s famed Hampshire House (the setting for the long-running TV series, “Cheers”), The Russian Tea Room in Manhattan, opening the first Planet Hollywood in Manhattan and serving as general manager and partner at Sonsie in Boston to name a few before landing in Austin in 2004.
In Austin, O’Neill has lent his management skills to Uchi and was instrumental in the openings of The Belmont and Max’s Wine Dive. A true passion for the hospitality industry drives O’Neill in each of his endeavors. When you enter Bistrot Mirabelle, it is very likely you’ll be greeted by him personally – both coming and going.<
